Red Drum is a noble fish, well known for the subtle flavor of its white flesh. Often called Red Drum, Redfish, Channel Bass, Ishimachi or Tambour Rouge (Sciaenops ocellatus), this fish comes from the wonderful Mauritius Island and is the first seafood product certified « Friend of the Sea » of this country. The Red Drum has a light, delicate flavor and a meaty texture, very close to the Seabass and the Red Snapper.


The Red drum fits to every culinary preparation : grilled, braised, cooked in fat fry, court-bouillon, steamed. Sashimi quality approved.
