The peruvian anchovy present the most important stock of all the south american coast and is assessed by the IMARPE - Instituto del Mar del Perú - at 8 millions tons.
In the field of a rigorous policy led by Peru to protect the ressources, fishing is limited by quotas. Upon 5 to 6 millions tons caught each year by the industrial and artisanal fleet, 95% are processed in fish meal.
The anchovies are really nutritious with a great content of omega 3 fatty acids. ARCOPA, one of the Peru's leading fish processing and freezing companies producing seafood products for human consumption, can propose fillets, but also a surimi-base of anchovy offering remarkable qualities.
